I did not make these babies from scratch(it's okay to cheat sometimes, especially when you are waking up at 7:00 am to make muffins for breakfast), but I did change out the oil for applesauce (the not-homemade-by-my-grandma kind) and added some extra cinnamon, nutmeg, and vanilla. I did make the icing from scratch though and added it on top. Yummy.
I made some of the muffins minus the strudel topping for my diabetic Momma and Papa.
Sadly I over-baked them a bit. But they were still good mostly. I just took the very bottom off.
Currently, I am sitting in a Barnes and Nobles two and a half hours away from my house. My family drove up to Midland today. As soon as we walked in I picked out about ten cupcake cookbooks. I found a few that I really like and am currently picking out a few good ideas from them. Cupcakes are so the best things ever. Its quite funny because my Papa (grandpa) is sitting across from me drinking hot chocolate and for a moment I thought I was smelling chocolate cupcakes from these books. Good thing I left all of my money and debit cards at home or I'd be buying all these books up!

They're backwards, but these are my two favorites..."cupcakes!" by Elinor Klivan, and "500 cupcakes" by Fergal Connolly.
