I hate tomatoes. They just do not taste good to me, not at all. However, I continually try bruschetta. Angelo and his family are Italian and love any and all Italian food, so there are plenty of chances for me to try this dish. A lot of the time it tastes too tomato-y for my picky taste buds, but every now and then I come across some that I cannot get enough of. So I have thrown this recipe together. Personally I only measure the ingredients by sight, smell, and taste, but these actual measurements should do the trick. Feel free to change things around to your taste.
Ingredients:
French baguette
2 cups tomato (I used roma tomatoes)
¾ cup onion
1-2 cloves of garlic (depends on how much you like garlic)
1cup Fresh mozzarella balls (I love my cheese)
Fresh Basil (3-4 large leaves, maybe)
2 tbs. Olive oil
Sea salt and black pepper to taste
First thing is first. Roast that garlic. It takes about 40 minutes to do so, so make sure you give yourself enough time
In the meantime, mix together your tomatoes, onion, mozzarella, basil, olive oil, salt, and pepper. I know my recipe says fresh mozzarella but I accidently forgot to pick that up and I used shredded mozzarella. It works, but it isn’t quite as good. If you do use the fresh stuff chop that into small cubes like the tomatoes and onions. The basil should also be chopped up pretty small.
Once that is done cover it and store it in your fridge until serving time.
Now cut the bread. The slices should be about one inch thick. Pour a little olive oil on a baking sheet and arrange the bread in one layer on top. Once your garlic is done put the bread in the oven for about 3 minutes then flip the pieces and put them back in for 4 minutes.
While the bread toasts take the roasted garlic cloves out of the shell. You should be able to do this easily with a butter knife. Then grab a spoon and mash them all up so that your garlic looks like butter. When the toast is done spread a little of the garlic on each slice.
Now it’s serving time! Spoon the tomato mixture on each slice of garlic toast and enjoy!!
